Using variables in table output step

Matt has posted a video here (http://www.youtube.com/watch?feature...&v=EjzgzOanq1o) which outlines how to use the metadata injector to get data into a table.

I'm trying to do almost exactly what he's doing in the video, and I've got the metadata injector working, but I can't work out how he uses variables in the table output step.

I'm guessing that I'm being really thick, but without any set variables steps and no obvious way to use variables in the table output step I'm stuck.

Any ideas?
